I used frozen broccoli. I cooked it and drained it before I tossed it in. Make sure to decrease the stock to 2 1/4 cups to compensate for the cooked broccoli.

I had to tell my family that this was a horrible recipe and I’d make them something else. When I got in the kitchen I chuckled and said all mine! This recipe is delicious. I did change a few things which I hope helps other reviewers. I used frozen broccoli. While it cooked and drained I cooked my ham in some butter. Because my broccoli was cooked I only used 2 1/4 cups of stock. I also added a half teaspoon of rosemary, onion powder, garlic powder and thyme. I used a 1/4 teaspoon of sage and cayenne pepper. If these were omitted it would still be a delicious dinner. I fessed up and served it to the family. There were no leftovers.

Delicious! Addictive delicious. I did have to add more chicken broth and cook it a little longer because rice was not getting soft but very easy recipe. Will be cooking again.

I am always looking for quick and easy meals during the week. This one fits the bill ! I made it without onion powder, but it was still so good. I was disappointed there weren’t leftovers ! My two and five year old gobbled it up.
