Hi! I think that would work fine, I would just try 1 Tablespoon or so and see how that works. Another option is to use maple flavored sausage links or a dash or two of maple extract.

The store-bought ones have a maple syrup taste. The recipes I find that use maple syrup also have you homemaking the batter. I want to use pancake mix and not my own batter, but I also want maple syrup flavor.
