I’m a cookie snob, so am always leery to try new recipes. I have my tried-and-true favorites, (thankyouverymuch), and sooo many baking blogs have let me down.

Not this one!

I guess I’ve never seen a cinnamon roll cookie before, so I was intrigued! My first instinct was to try to find a recipe that had more reviews, but I ultimately decided on this one because it was the first place I’ve seen the idea. So glad I did!

These are a great combination of soft, chewy, with a bit of mount-in-your-mouth crispy (but not too crispy) due to the butter in the filling. I had some nit-picks, but I think small tweaks to the recipe will “fix” those for me. I plan to first try. Spreading melted butter on the rolled out dough before spreading the cinnamon/sugar, because the amount of butter varied which made for inconsistencies around the filling. If that doesn’t help, I’ll try slicing the cookies slightly thicker. That way, some of the inconsistencies won’t leave holes where a big blob of butter was that melted into the baking cookie.

These cookies do not need icing. It’s good, but great without, too.
