I was a little skeptical about making a cookie without flour, but decided to give it a try. I made the mistake of making my dough balls too large and close together. These cookies spread out a lot when they bake, so definitely follow the directions of placing the dough balls walnut-sized 2 inches apart.

They did come out as blobs due to my mistake but they were the favorite among my Xmas cookie collection! I didn’t even do the icing on them. Amazing holiday flavor!
