Wow! That was incredible. I used spicy Chili beans and 1 cup of Chipotle seasoned cheddar cheese. I also used brown basmati rice changing the cooking time to 45 mins. Otherwise kept everything else the same. This might become a new favorite that I add into the rotation. Thank you for this awesome recipe.
